Salted and caramel brownie recipe

For Brownie:

• 250g salted bretzel crackers + 2 tablespoons melted butter
• 250 g dark chocolate
• 27 g flour
• 7 g of cocoa
• 165 g of butter
• 165 g brown sugar
• 4 eggs


For the caramel:

100 g granulated sugar
100 g liquid cream
20 g butter

• First of all, the chocolate is put in a deep kitchen bowl.
• The butter is melted and added to the chocolate and stirred until the chocolate melts.
• On the other hand, eggs and sugar are whisked with the whisk.
• We obtain the brownie mortar by adding the egg mixture that swells during the joining, from flour and cocoa to the chocolate mixture little by little, stirring it from the bottom up (we apply the bottom-up mixing process in order not to extinguish the mixture).

  • We separate the salted crackers so that they are placed in one row on the brownie.
  • After passing the remaining crackers through the blender and dusting them, we mix them with 2 tablespoons of melted butter and press them into the brownie mold laid out in greaseprose paper like a cheesecake base.

• We take the granulated sugar into the pan, melt it over a low heat and shake the pan occasionally until it changes color.
• Then, after the sugar takes the color dark caramel, we add the cream and mix it.
• Butter is added to it near darkening and the bottom is closed and left to cool before it darkens too much.

• First, caramel is made and cooled.
• Then the salted base is made and kept ready.
• After the brownie mixture is also prepared, brownie mortar is poured on the base and caramel is dripped into it at certain points (caramel will sink to the bottom as it will be dense and dark).
• Then at the top, the salted crackers we have reserved are arranged in one row.
• Bake in a preheated 180 degree oven for 25-30 minutes.
• Once the brownie we have removed from the oven is warmed or completely cooled, you can slice and serve it.
• 25 minutes will be enough if you want a light fluid inside.

Note: If you wish, you can heat the remaining caramelis and pour it over the brownie during serving and serve.
