Lemon cookies recipe

  • 2.5 cups flour
  • 1 tsp carbonate
  • 1/2 teaspoon baking powder
  • 1-2 lemons
  • 1 + 1/2 cups granulated sugar
  • 1 cup butter
  • 1/2 teaspoon salt
  • 1 egg
  • Granulated sugar for over

  • Stir in a bowl, sifting the flour, carbonate, baking powder and salt.
  • Grate the shells of the lemon and squeeze the juice. 
  • Mix the sugar and lemon zest and whisk with the butter.
  • Add the egg and lemon juice and continue to mix.
  • Gently add the dry mixture and combine the dough.
  • Divide into equal pieces with your hand and roll them in your palm and smudge them in powdered sugar.
  • Bake in a preheated 175 degree oven for 8 minutes.
