How to make truffle chocolate?

200 grams of cream

40 grams of honey

200 grams dark chocolate

70 grams butter

20 grams powdered peanuts

20 grams of cocoa

20 grams of nutmeg


Put the cream in the pan, add the honey when it starts to boil and take the pan over the heat. Continue to mix, starting from the center, gradually pouring this hot cream over the dark chocolate. Make sure the ganache is smooth. Add the chopped butter to the mixture at 40 degrees and leave to rest. Create balls of an average of 20 grams. Line the chocolate balls with dark chocolate. Then smudge it in cocoa, peanut powder or coconut.
