Blueberry raw vegan cheesecake

FOR THE BASE:

•60 g (1 cup) raw hazelnuts
•30 g (1/2 cup) walnuts
•30 g (1/2 cup) raw almonds
•4-5 medium dates
•1 teaspoon lemon juice


•140 g raw cashews soaked in warm water for 1 hour
•60 ml agave syrup (honey or apple juice concentrate can also be used)
•80-90 g blueberries
•1/2 lime juice
•1/2 cup coconut oil
•2 tablespoons water
•1 pinch salt


  • ️Remove the seeds of the dates, soak them in a small amount of hot water, remove them from the rondo and mash them.
  • ️Pass all the nuts through the rondo, it does not need to become full powder.
  • ️Mix the dates, nuts and lemon juice in a bowl.
  • ️Spread out the mixture you have prepared for the base and lift it into the refrigerator, cool the cling film to the base and edges of a borcam or baking dish in sizes 20×15.

Now let's fill it out...


  • Bring all the ingredients to the consistency of mash in the rondo and pour over the base in the fridge. If you want to make it 2 color filled, you can divide the filling measurements I give by 2 and add half of them plain and the other half by adding blueberries.
  • ️Straighten the top and lift it into the freezer.
  • ️ Remove 10 minutes before service and let it soften slightly. If you wish, you can make extra decorations with fresh blueberries or edible flowers.
