Barley noodle with vegetables


• 2 medium zucchini
• 2 medium eggplants
• 4-5 stalks of spring onions
• 2 capsia peppers
• 1 coffee cup barley noodles
• Olive oil
• Salt & Pepper


• Dice zucchini (with peels), eggplant, capia pepper and spring onion.

• Blend beautifully with salt, pepper and a generous amount of olive oil.

• Bake in a heated oven at 200°C for 15-20 minutes on a baking sheet where you lay oil paper.

• Meanwhile, boil and strain barley noodles in salted water. Don't run water over it.

• When the vegetables are cooked, mix with the barley noodles and add a little more olive oil.
