  • Half a packet of risotto rice
  • Half a packet of cultured mushrooms
  • Half onion
  • 2 cloves garlic
  • 2~3 sprigs fresh basil
  • 1 glass of white straight wine
  • 1 pack of grated parmesan cheese
  • 30g butter

For the chicken broth

  • 1 chicken bud
  • 4 cups water
  • 1 carrot
  • 1 green celery
  • 1 onion
  • 1 clove garlic
  • 2~3 bay leaves
  • Salt

  • In the medium saucepan take the chicken bud and add 4 cups of water on top. Add the peeled and cleaned vegetables, peeled and cut in half with the onion and garlic. Add the bay leaf and salt and bring to the boil.
  • Melt the butter in a large pan. Finely chop the garlic and onion and roast in the butter. Add the rice, stir constantly and roast for 5 minutes.
  • Finely chop the mushrooms, add them and stir. Add the white wine. Stir in the boiled chicken broth continuously until the rice is infused with a scoop. When the rice is tender, remove from the heat. Finely chop and add the basil and stir. Put on a serving plate, sprinkle with grated parmesan cheese and serve.
